Roasted Corn & Black Bean “Salsa”

Roasted Corn & Black Bean Salsa              

Add a big splash of color when you serve up this low fat dish! Packed full of fiber and protein, this dish is more than a meal, but a good way to help your body nutritionally! Not only is this dish easy to make but very economical too!

 

Ingredients

2 cups black beans (2 cans of black beans, drained and rinsed)

2 cups yellow or white corn (fresh, grilled. or 2 cans of crisp corn, drained)

2/3 cup green or red peppers (chopped)

1/3 cup red onion (chopped)

1/4 cup fresh cilantro (chopped)

3 tablespoons lime juice

1 tsp olive oil

1/2 tsp salt

1/2 tsp ground cumin

1/8 tsp ground red pepper

Preparation

Mix all ingredients and chill overnight.
